The Best Veggie Burger: Mouthwatering Mushroom Burger

Full disclosure: we love burgers! And definitely not because we miss the taste of meat. My guess is because we just can’t say ‘no’ to some veggie deliciousness stuck between two round pieces of bread. So, as you can imagine, this led to a long and mostly tasty search for the perfect veggie burger. And I’m happy to say: we have a winner!

Full of hearty mushrooms, lentils, sweet potatoes and lots of spices  this burger is truly mouth-watering! On to the recipe!

 

Ingredients for 6 burgers

  • 500 gr. chopped mushrooms
  • 1 large sweet potato
  • 1 large diced yellow onion
  • 1 can cooked lentils
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh thyme
  • 3-6 cloves garlic, minced (ok, I used at least 6)
  • 1 teaspoon paprika
  • 1 teaspoon turmeric (I add it in mostly anything these days)
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 2 teaspoons quinoa flour
  • 2 tablespoons unrefined coconut oil
  • ketchup sauce (we’ll get to that later)
  • slider buns
  • watercress

Instructions

  1. Cut the sweet potato in small cubes (about 1/4 inch) and sauté it in a heated skillet with 1 tablespoon of the coconut oil for about 10 minutes.
  2. Dice the mushrooms and the onion and add them to the skillet. Sauté for about 5-10 minutes until golden, then transfer to a plate to let the mixture cool. After it’s cooled add it to the food processor together with the rest of the ingredients and blend it. Be careful not to over blend so it can still maintain a little texture.
  3. Divide the mixture into 6 equal parts and shape them into patties. Heat the skillet again, adding the remaining 1 tablespoon of coconut oil. Carefully cook the patties on both sides until brown.
  4. Cut the buns in two and assemble you perfect veggie burgers using homemade ketchup sauce and some watercress.
  5. Best served warm, but also work very well the next day packed in a lunch box.

P.S. These make perfect meatballs too, so you can use the same recipe for you favorite spaghetti & meatballs!

Salată de Cartofi cu Muștar: Perfectă pentru Vară!

Cartofi noi și pepene roșu: două dintre bucuriile culinare naturale pe care ni le aduce vara! Dar, sinceră să fiu, în afară de a-i prăji, nu am experimentat niciodată cu cartofi noi. Până ieri când am găsit o minunată rețetă în lista de 31 de rețete de vară pe care să le încerci în august de la Buzzfeed, listă pe care o recomand din toată inima! La începutul fiecărei luni puteți să găsiți la ei o selecție de rețete pentru fiecare zi a lunii respective adecvate sezonului. 

Dar să revenim la rețeta noastră! Eu am adăugat tofu rețeteo originale, iar rezultatul? O salată ușor de preparat, proaspătă, aromată, acrișoară, sățioasă, sănătoată și pur și simplu delicioasă, perfectă pentru vară, atât ca fel principal, cât și pe post de garnitură!

Ingrediente pentru 2 persoane

Pentru salată:

  • 600 gr. de cartofi noi
  • 1 mănunchi de ridichii roșii
  • 1 legătură de pătrunjel
  • 200 gr. tofu (eu am folosit Organic Tofu Sliced de la Kaufland și a fost yummy!)

Pentru dressing:

  • 3 linguri pline de muștar Dijon cu boabe întregi (recomand Maille a l’Ancienne)
  • 2 cepe de primăvară tăiate
  • 3 linguri ulei de măsline
  • 1 lingură zeamă de lămâie
  • sare și piper după gust

Cum se prepară?

  1. Taie cartofii în două sau în patru în funcție de dimensiunea lor și pune-i la fiert 15-20 min sau până întră furculița ușor în ei)
  2. Într-o bol prepară dressingul amestecând toate îngredientele pentru acesta.
  3. Taie pătrânjelul și ridichiile felii cât mai fine.
  4. Scurge cartofii și lasă-i să se răcească. Apoi amestecă toate ingredientele, inclusiv dressingul, mai adăugă sare și piper dacă e cazul.
  5. Poți să servești salată imediat, dar se păstrează bine și 1-2 zile la frigider.

Mănâncă sănătos! Trăiește frumos!

Bento Box Lunch: The Best Vegan Burger

In my quest for a lunch recipe that is easy to make and easy to assemble and that fits into the Hubby’s Bento Box and that’s delicious AND vegan I stumbled upon Jamie’s recipe for The best vegan burger. And let me tell you my dearest dearest readers that if a hyperbolic title was ever true it’s this time!

“Packed with flavour, these vegan corn burgers are healthy and seriously satisfying. ”


Ingredients

  • 1 x 400 g tin of chickpeas
  • 1 x 340 g tin of sweetcorn
  • ½ a bunch of fresh coriander (I used dried, and it was just fine 🙂
  • ½ teaspoon paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon ground turmeric (not in the original recipe, but I’m currently having a love-affair with turmeric, so I’m putting it in everything!)
  • zest from 1 lemon
  • 3 heaped tablespoons whole wheat flour , plus extra for dusting
  • rapeseed oil (again, I used olive oil and it was lick-your-fingers delicious)
  • 1 small round lettuce
  • 2 large ripe tomatoes
  • 2 ripe avocados
  • tomato sauce
  • 4 wholemeal burger buns

Method

  1. Stars by draining the chickpeas and sweetcorn, and add them to the bowl of your food processor.
  2. Add the spices, salt, lemon zest and flour and pulse until combined, BUT stop before it turns into a paste. Remember, you still need a little texture.
  3. Divide the mixture into 4 equal-sized patties about 2cm thick on a flour-dusted surface, and then place them in a fridge for about 30 minutes.
  4. Heat a little bit of oil in a non-stick frying pan and cook the patties over medium heat on each side until golden. I’m considering placing them in the oven next time, and I”ll let you know how that turns out.
  5. Assemble and enjoy! Bread bun + tomato sauce + veggie patty + tomato slices + avocado + bread bum.

Packing tip

Pack the bread separately to keep it fresh, and place the buns on a bed of spinach leaves to keep them fresh.

Hello! My hame is Ioana and I am a BOXaholic! Ever since I was a little girl there was no box I could resist, whether it was my mother’s hand-carved jewelry box, or a simple cardboard one. And I’m not finished with Black & Blum, but we’re moving on to the Lunch Pot by Black & Blum for those us you who prefer a more liquid lunch. Ok, that didn’t sound very appetizing, but we all know it is, so lets move on to what this lovely little pot can offer you: water-tight design, small pot fits into larger pot when empty, AND it comes with a carry strap. I don’t know about you guys, but my next ASOS shopping spree will surely include this pot.

We can’t have a proper Lunch Box selection without at least one that is simply pretty! And the Happy Jackson Hello Lunch Box doesn’t just come with a cute slogan in a cheerful color, but also with a removable compartment and a secure clip fastening. Not microwave-friendly, but oh-so-pretty!

5. Pusheen Snack Pots – €10.67

And a very special surprise for all of you who made it to the end of this post! Yes, good things do come to those who wait. Without further ado, I give you **drum roll** the Pusheen Snack Pots! I rest my case.
